Munch on this Monday — Spinach Pies

I had an extra box of Pillsbury Pie Crust in my freezer along with fresh spinach and saw this simple and quick recipe.

{S P I N A C H    P I E S}

Delicious snack or dinner for the family.
Ingredients Spinach Pies

Grab:

2 eggs

1/2 tsp. salt

1/4 tsp. black pepper

1/2 onion chopped

9 oz fresh chopped spinach

1 tsp. garlic powder or fresh garlic

1/2 cup of half and half milk

1/3 cup of mozzarella cheese

Pillsbury Pie Crust

Step One: 

Preheat oven to 425 degrees

Spinach Mixture

Step Two:
In medium bowl, beat eggs. Stir in half-and-half, cheese, garlic, salt, and pepper. Stir in spinach and onions.

Spinach Pies Dough

Step Three:
Knead dough until softened. Press 1 rounded teaspoonful dough in bottom and up side of each of 12 greased muffin/cupcake pan.

Spinach Filling

Step Four:
Bake 15 minutes or until puffed and golden brown.

Spinach Pies

Step Five:
Serve warm or cool.
